Arugula Salad
Fresh, peppery arugula pairs nicely with the Steamed Clams with Pasta.

5 ounces arugula
2 tablespoons extra-virgin olive oil
1 – 2 garlic cloves, smashed
1 tablespoon fresh lemon juice
1/4 teaspoon lemon peel, grated
Toss arugula with olive oil, lemon juice, and peel. Add garlic. Toss to coat.
Makes 6 servings.
